In 2012, Edge opened its doors as a restaurant focused on using ingredients from local farms. Thankfully, Edge is located in the heart of one of the largest agricultural centers in the region. Several years later, Edge is thriving in the center of Peoria Heights, Illinois. Thanks to our location, we are able to acquire ingredients from across the Midwest region. We use these ingredients in a “simple” way – not “simple” as in easy, but “simple” as in transparent.

When you dine at Edge, you will enjoy plates that feature food in their purest form. When your dish is placed in front of you, you might see unusual pairings of local ingredients, but when you start to enjoy your dish, you will find out that the flavors are from across the globe.

At Edge, our standards of ingredient sustainability, quality and freshness are uncompromising. Call it farm-to-table, farm-to-fork, farmer-focused – any of the hyped-up words trending now. We call it our best choice. Our team works with trusted local farm partners to find the best produce and livestock for seasonally rotating menus. Our chefs are trained to understand plant development from a crop’s earliest stages of growth to its peak level of maturity to produce the best flavors. Our proteins are raised ethically and humanely. They are developed into dishes in-house to make sure every part is used fully and properly to reduce food waste. Whole farm cooking, in our kitchen – it’s the only way.

    Grilled lamb chops paired with moroccan couscous and lamb sauce
