Chef Bios
Our chefs are dedicated to developing the finest in American fusion cuisine with a local touch and a global flare for flavor.

Chef Austin Smith
Executive Chef
Formally trained at the ICC Culinary Arts Program, Chef Austin has an incredibly eclectic background in the kitchen. His expertise lies in incorporating diverse flavors, with a focus on rustic, rural American roots. Before he settled into our kitchen, he travelled the country as a professional musician, which allowed him to experience a wide range of regional American cuisine. He still practices in his home studio when he’s not developing the next great American fusion dish.

Chef Jessica Stevnor
Executive Chef
Chef Jessica has a classical training in French and Italian cuisine through the ICC Culinary Arts Program. She has a classical foundation with worldly influenced, based on her international travels. Her expertise lies in marrying these classical influences with American cuisine and locally sourced produce. She is also the magic behind our house-made syrups used in our crafted cocktails. Along with being Executive Chef, she is the proud mom of two boys – and an inspiration to working moms everywhere!

Chef Katie Verkuilen
Pasta & Pastry Chef
Chef Katie is an artist in every sense of the word. As our pasta and pastry chef she creates our delicious desserts and fabulous pastas every day. When she’s not developing fantastic new creations, you can find her working in her painting or in her ceramic studio as a 3-D artist. Throughout our restaurant, you can see her artwork, which is available for sale.

Chef Russell Trockur
Sous Chef
Russ graduated from the ICC Culinary Arts Program in May 2022. His youthful exuberance has been a great inspiration to our team, and he has provided input into many of our dishes. Prior to that, he served 4 years in the US Marine Corps in the 1st Battalion, 1st Marines from 2011-2015, with a deployment to Afghanistan in 2012. Semper Fi!
